Here's one I want to try:
Chocolate Caramel Pecan Rounds

1 cup butter, softened
1/3 cup granulated sugar
1/2 teaspoon vanilla
1/4 teaspoon salt
2 cups all-purpose flour
TOPPING:
12 vanilla caramels
1 1/2 teaspoons half and half (10 percent) cream
1/2 cup chopped pecans
1 square (1 ounce) semisweet chocolate, chopped and melted

Preheat oven to 350 degrees. In large bowl, use wooden spoon to beat butter, sugar and vanilla until blended, about 3 minutes. Gradually add salt and flour. Mix well. Using your hands, knead to form a smooth dough. On lightly floured surface, roll out dough to 1/4-inch thickness. Using cookie cutter dipped in flour, cut into rounds. Place on ungreased cookie sheet about 1 inch apart. Bake in preheated oven 10-14 minutes, or until golden around edges. Cool for 10 minutes on sheet and then transfer to rack and cool completely.

Topping: In small saucepan over low heat, combine caramels and cream; stir until melted and smooth. Dip one side of each cookie (about a third of the surface) in caramel mixture and then into pecans. Place on wax paper and drizzle melted chocolate over top. Let set for about 1 hour. Freezing is not recommended. Yield: 30 cookies.
